Great Carver
Great finish on the maple, consistent edge and great AEB-L steel. I like the fact that this is a truly custom knife. This was my first J Hoffman knife, but I like this is a fully custom knife all done in house my J. Hoffman, including the hardening process. The Dublin doesn’t come with a sheath, but I got it for my kitchen block. It is a good everyday day use kitchen knife for… read more meats and carving. You could do game processing with it as well but the spalted maple looks better around the carving board. Price is on par for a custom knife, good one for the collection!
