Sharpening stones: types, grits and care

Start with a diamond plate in the grit your edge needs: the dated offers below cover coarse repair through fine refinement. Choose an Arkansas kit if you prefer its maker’s oil-and-grade system; compare waterstone preparation separately in the maker table.

Choose the routine before the grit

A stone you can prepare, secure and maintain is a more useful starting point than a long grit ladder. First identify the exact knife and the edge work needed. Then decide whether you can support water, oil or the maker’s dry-use routine. The table below shows specific maker examples; a material name does not supply a universal soaking rule.

Stone types, maker grit labels and care

Compare each instruction with the exact stone you own. Wüsthof’s soaking guidance and Shapton’s first-use exception are different. DMT’s numbers are explicitly mesh and microns. Arkansas grades describe a different system. Missing fields remain visible instead of borrowing instructions from another maker.

What does “1000 grit” tell you?

A bare grit number is not enough. The whetstone grit converter keeps JIS microgrits, FEPA, ANSI, CAMI and DMT mesh separate. It compares recorded particle sizes, not cutting speed or finish. A maker-specific label without a published micron value stays outside conversion. Do not turn Dan’s related Arkansas grit ranges into a certified JIS grade. Which grit should come first?

Use the stone maker’s instructions for the edge condition. DMT separates repair from refinement and advises moving from coarser to finer abrasives. Its guide gives 325 mesh as coarse, 600 as fine and 1200 as extra fine. Those names belong to DMT’s series. Buying the largest grit number does not resolve a damaged edge or an uncertain blade angle. Soak, splash, oil or dry?

Read the product instructions before adding any liquid. Wüsthof says, “Submerge the stone in water for approximately ten minutes.” That statement applies to its linked whetstone routine. Shapton’s FAQ instead allows a splash of water after a first-use pre-soak recommendation. Dan’s EZ Hone includes oil, but the accessible product page does not publish the full oil application procedure. Do not fill that gap with waterstone advice. Do I need to flatten every stone?

Shapton describes lapping an uneven stone. Fällkniven says the DC4 materials keep their flat shape as they wear, while DMT describes a separate Dia-Flat lapping tool. Follow the maintenance rule for the exact abrasive instead of flattening every product by default. Shapton FAQ; checked 2026-11-07. Fällkniven DC4 instructions; checked 2026-11-07. What should I buy with the stone?

Confirm a stable support, the right liquid if required, and the maker’s cleaning and maintenance instructions. Check which parts come in the exact listing; a replacement stone for a guided system is not necessarily a freehand bench stone. Our sharpener comparison covers guided kits. The whetstone steps explain preparation and angle records before you start.

How we chose these

We chose five listings for their abrasive formats and grit coverage, using the saved earning-merchant roster and feed receipts. The maker table explains preparation and maintenance; each offer links its own available maker evidence. This is manufacturer research with no sharpening trials or performance ranking.
